    Food is headline news, whether it be in the poor countries in the Southern hemisphere where the threat of famine has returned, but also in the rich countries where junk food and obesity have become recurrent public health questions. The issues posed are considerable whether they be economic, political, humanitarian or cultural. World-level dimensions, including the environment, geo-politics and the agro-food industries interact with local or national dimensions given that States still have their say in the matter. Eating may also be associated with deep-seated fears, and in these instances, give rise to important discussions at societal level - examples include bird 'flu, 'mad cow' disease or genetically modified crops. Finally, to some extent at least, eating is a question of education and learning. We are increasingly concerned with what we eat but also with learning to develop our own taste, both here and elsewhere.
